Why would prosecutors not pursue someone who pleads the fifth?

Pleading the 5th is not a get out of jail free card. It just means you are not going to answer questions that incriminate you. However if they have enough proff without your testimony then they will proceed. Have not seen any statistics on "How often is a person pursued for charges after they plead the fifth?"
